Abstract: Owing to its binding properties and hydrophobic nature, bitumen is commonly used for the construction of pavements and waterproof systems. Bitumens differ in their physical properties according to the nature of their crude oil sources, subsequent production processes and severity of the operating conditions. Bitumen properties are naturally related to its composition. Solid‐state nuclear magnetic resonance (NMR) techniques are generally used to determine the mass fractions of amorphous and crystalline phases in polymers, and thus the crystallinity. NMR imaging is a powerful non‐invasive technique widely used in medicine. NMR spectroscopy has gained increasing relevance in the area of structural and molecular characterization of complex compounds such as bitumen. NMR spectroscopy has been used to obtain detailed chemical information about the proton and carbon chemistry of neat bitumen and modified bitumens, in addition to their structure and rheological behaviour.

Abstract: Spent coffee grounds (SCG) and coffee silverskins (CSS) are two high volume industrial by-products rich in valuable components, such as alkaloids, diterpenic and phenolic compounds, triglycerides (oils), and polysaccharides. Their recovery yield and purity are highly dependent on the selected extraction method and operating conditions. This chapter discusses recent advances on the following separation technologies: solid-liquid extraction (SLE) using conventional solvents and ionic liquids, supercritical fluid extraction (SFE), subcritical water extraction, ultrasound assisted extraction, and microwave assisted extraction. SLE and SFE are the most mature approaches for the extraction of coffee by-products, although promising results have been reported for the other technologies. Solvents like ionic liquids and deep eutectic solvents are expected to play an important role in the near future, along with other approaches such as pervaporation, nanofiltration, sorption (adsorption and ion exchange), hydrothermal liquefaction, pulsed electric fields extraction, and products synthesis under the scope of nanotechnology. Overall, these methods produce oils/extracts rich in phenolic compounds exhibiting valuable antioxidant activity levels, with encouraging extraction yields. The optimization of both operating conditions and units arrangement is crucial to ensure their technological and economic viability. Currently, a considerable number of scientific studies and patents demonstrate or claim their use for various applications, including dermatological formulations, pest control formulations, growth enhancer substrates for bacterial cultures, biodiesel production, among others.

Then, process and natural products improvements based on SFE technology (Section 11.3) are discussed through the following topics: SFE suitability for intensification and integration of processes (Section 11.3.1), enhancement of vegetal extracts by SFE (Section 11.3.2), and advantages of SFE in food processing (Section 11.3.3). The fourth section comprises prospective applications of SCFs at industrial scale, namely, nutraceutical and medicinal formulations (Section 11.4.1), supercritical CO2 as a breakthrough solvent/ technology for the pulp and paper industry (Section 11.4.2), defatting animal crude leather, wool and related products (Section 11.4.3), violent CO2 decompression for mechanical grinding (Section 11.4.4), and power (co)generation opportunities through SC-CO2 (Section 11.4.5). Final remarks are furnished in Section 11.5.

Chapter Title: Control of Coffee Samples Quality - Geographic and Roasting Factors

Abstract: The quality control of coffee and related products needs to consider several factors that are known to play important roles in the final organoleptic characteristics perceived by the consumers. The aroma exhibited by a coffee is determined by variables such as climate, soil, coffee species/variety, post-havest processing and the quality of the beans, as well as by the storage and roasting conditions. For instance, different degrees of roasting give rise to drinks with varying aromatic profiles, ranging from coffees with aromas rich in volatile acids and furans (responsible for fresh and floral notes), to coffees with aromas rich in compounds like pyrazines and pyridine (responsible for characteristic roasted and earthy notes). The geographic provenance of the coffee is also associated with characteristic compositional compounds, which can be used as markers to confirm or disclose the origin of a given sample. This chapter focuses on two of these factors, namely the geographic origin (associated with climate and soil) and the roasting procedure, and aims at providing a systematic assessment of the chemical compounds that are mainly responsible for the quality of coffee samples. In this respect, multivariate statistical analysis can be employed with advantage to build discriminant models able to differentiate coffee samples, as well as to identify the key chemical compounds suitable for such differentiation. Although more than 800 compounds have already been identified in coffee samples, the discriminant models can rely on only a few markers such as aldehydes, pyrazines, pyrroles, and furans. An evaluation is also made of the link between key compounds and the organoleptic characteristics perceived by the consumer. This approach provides reliable means of complementing typical quality control procedures that rely on sensorial evaluation (cup tests), because not all the odorant compounds present are useful for differentiating geographical origins and degrees of roasting, while some non-organoleptically active molecules are statistically decisive for an enhanced discrimination.

Chapter Title: Preparative Chromatography: Batch and Continuous

Abstract: Chromatography, although initially prevalent in the analytical field, is increasingly extended as a preparative process for the commercial scale production of several chemicals whose separation from feed streams is difficult to achieve by conventional methods. In this chapter, the most relevant and recent preparative chromatography approaches are presented and discussed, divided in terms of batch and continuous processes. The fundamental conservation equations, kinetic laws, and equilibrium relations governing chromatographic systems are presented in detail as they are common to all processes modeling. Several models and approaches are presented in an order of higher approximation to reality that necessarily results in an increasing degree of mathematical sophistication. This complexity trend is linked to the sequential introduction of the various phenomena that take place inside the adsorption bed. In particular, the influence of finite mass transfer resistances and axial dispersion upon the dynamic behavior of the chromatographic system is highlighted. With regard to batch chromatography, the most frequent techniques, such as preparative HPLC and supercritical fluid chromatography are covered, along with key chromatography concepts. Closed loop recycling chromatography and steady-state recycling chromatography are recycling techniques that may be situated between batch and continuous strategies, being able to enhance the performance of batch systems while avoiding the higher complexity inherent to continuous approaches. Regarding continuous chromatography, the development of the simulated moving bed (SMB) technology has allowed improved productivity, product's purities, and lower operating costs compared to batch processing. Since its inception, several different strategies and modifications to the conventional SMB have been proposed. The well-established and the most innovative SMB operation modes, such as intermittent-SMB, supercritical SMB, and variable external streams systems, are presented and discussed, along with the necessary equipment designs that allow their implementation. Other continuous chromatographic processes include the high-speed countercurrent chromatography and the centrifugal partition chromatography, both involving two immiscible liquid phases, and annular chromatography that permits continuous operation while using a stationary phase. Some brief remarks are made on equipment and system designs.

Innovative operation modes like Intermittent-SMB, Supercritical SMB, variable external streams systems, and other schemes for multicomponent separation may be cited. In this chapter, the modeling and fundamentals of such recent strategies are presented and discussed, being compared with conventional SMB modes of operation.

Abstract: Procyanidins are polyphenolic compounds containing flavan-3-ol units linked by C4- C8 or C4-C6 bonds (type-B structures) or doubly linked by an additional C2-C7 acetal bond (type-A structures). Gallic acid can occur as an ester at C3 position. In grape seed tissues, procyanidins represent more than 70% of the total flavan-3-ol composition. Procyanidins have been described to possess a wide spectrum of pharmacological and therapeutic effects such as antioxidant, anti-inflammatory, and antimicrobial abilities, as well as significant cardioprotective properties and potential high blood pressure lowering benefit. The degree of polymerisation of procyanidins may influence their action intensity, which suggests previous fractionation of crude extracts in order to inspect such relation. These issues are addressed in this chapter for the specific cases of the antioxidant activity and the inhibitory action upon Angiotensin I-converting enzyme (ACE). ACE catalyses the production of Angiotensin II (powerful vasoconstrictor) and inhibits bradykinin (powerful vasodilator). Hence, procyanidins may have potential action in lowering both systolic and diastolic blood pressure values.

Abstract: Supercritical fluid extraction (SFE) has been a widely studied green technology to obtain oil and bioactive compounds from grape residues like seed, skin, pomace (marc). In this chapter, research advances regarding the SFE of grape residues are covered, particularly the optimization of operating conditions, modeling, scale-up and preliminary economic evaluation. Carbon dioxide is the most common solvent adopted for extraction, being generally modified with small amounts of cosolvents (e.g. ethanol) in order to enhance the solubility of the target compounds. The operating conditions found lie between 100 and 700 bar, 35ºC and 80ºC, 0 and 40% (v/v) of cosolvent. The existence of patents protecting the use of SFE technology upon grape residues is an acknowledgement of its suitability for food and drink industries, at least from the point of view of bulk extraction. The state-of-art concerning SFE of grape residues fully supports the commercial exploitation of this technological solution to produce oil and phenolic fractions from grape residues.

In this context, the valorization of waste and side vegetable products is specifically addressed here, with emphasis on combined and hybrid supercritical extraction technologies. Matrix pretreatments like milling, sonication, enzymatic hydrolysis, and high-pressure carbon dioxide explosion processes are reviewed. The selection of operating conditions and cosolvents, along with their optimization and phenomenological and statistical modeling are also addressed.

Abstract: Metals are essential for the existence of life. Due to their chemical, physical, electrical and mechanical properties, they found a large number of applications, their use being intrinsically associated with the development of society. Besides their natural occurrence in the ecosystem, the application of metallic compounds in several industrial and agricultural sectors gives an inevitable rise to their release and dispersion into the environment. Accordingly, metallic ions must be separated from water and industrial water or effluents prior to final discharge whenever toxic or radioactive, or recovered in the case of valuable and precious species. In this chapter, the ion exchange of metallic ions solutions with the aim to recover, separate or pre-concentrate them is reviewed and discussed. After a general introduction on the topic, the discussion is divided into several sections according to the nature of the ionic species: precious, radioactive, priority pollutants and other metals. The main parameters of the sorption process are generally analysed, such as the influence of pH, temperature and initial concentration on the equilibrium and kinetic performance, as well as sorbent regeneration details and modelling.

Abstract: The accurate modelling of equilibrium and kinetics of ion exchange isfundamental for economic and safe design of industrial units, particularly to carry out the delicate scale-up studies and simulations. With regard to equilibrium, this chapter covers the following topics: (1) ion association phenomena; (2) activity coefficients in solution and exchanger phases; (3) the milestones works of Gaines and Thomas, Argersinger et al., and Ioannidis et al. to the thermodynamic treatment of ion exchange; and (4) a deep discussion of the three most important theories in the literature (homogeneous mass action models, ion adsorption and related models, and heterogeneous mass action models). Concerning ion exchange kinetics and mass transport processes, the chapter reviews semiempirical models, Fick’s law and derived expressions, Nernst–Planck equations, and the Maxwell–Stefan formulation. The chapter ends with the general modelling approaches to the omnipresent batch and fixed bed applications.

Abstract: Health benefits of grape seed procyanidins are related to their antioxidant capacity, which is dependent of their degree of polymerisation and structural features. Grape seeds are known as an abundant rich source of procyanidins consisting on both (+)-catechin and (-)-epicatechin forming units that, in the particular case of (-)-epicatechin, can appear galloylated or not. They are linked mainly through C4-C8 bonds (type-B procyanidins). In addition, the flavan-3-ol units can also be doubly-linked by a C2-C7 ether bond, giving origin to type-A structures, resultant from an oxidative intramolecular reaction. Mass spectrometry (MS) is a very effective and highly sensitive method for characterizing procyanidins from complex matrices. Electrospray ionization (ESI) MS permits the identification of the molecular weight of procyanidins with different degrees of polymerisation. In addition, Tandem Mass Spectrometry (MSn) can elucidate even more about the structural details of the different molecules. Procyanidin species of nongalloylated and monogalloylated type-A and type-B oligomers have been detected in grape seeds by ESI-MS. Type-A procyanidins abundance accounts for 60-80% of the abundance of the corresponding type-B species. Thiolytic analyses showed that the type-A interflavanic linkages are present in the terminal units whereas the type-B interflavanic linkages are present as extension units. The similarity of the relative abundances and structural features observed in the samples of both white and red grape varieties shows that these are characteristics of grape seeds independently of the colour of the fruit.

Abstract: Fluid transport properties, such as viscosity, diffusion coefficients, and thermal conductivity, are extremely important in both research and industry. Therefore, it is very important to accurately model the behaviour of these kinetic coefficients. At present, it is not yet possible to give a rigorous theoretical interpretation of the transport properties of dense fluids, since there are many-body interactions involved and because the pair potential energy functions are only known for simple molecules. Nonetheless, for liquids and dense gases, where the repulsive molecular interaction plays a major role in determining their properties, an accurate model for hard spheres can be used as an appealing and tractable first approximation for the major excluded volume and packing effects of real substances. In fact, it has been found that for the liquid viscosity and diffusivity the contribution of the hard sphere term is up to about 70%. This chapter will address the most important issues involved in the modelling of transport properties of hard sphere and modified systems. Special attention is devoted to the development and analysis of the models, as well as their final applications to real substances over wide ranges of temperature and density, from dilute gases to dense fluids, including supercritical fluids and liquids.
